Italian Wedding Soup | Ambitious Kitchen

Ingredients

For the Meatballs:

  • Ground turkey (or pork, beef, or chicken)
  • Breadcrumbs
  • Grated Parmesan cheese
  • Egg
  • Garlic (minced)
  • Italian seasoning
  • Salt and pepper

For the Soup:

  • Olive oil
  • Garlic (minced)
  • Onion (diced)
  • Carrots (sliced or diced)
  • Celery (sliced or diced)
  • Chicken broth
  • Acini di pepe (or other small pasta)
  • Fresh spinach (or kale/escorole)
  • Optional: Fresh parsley and lemon juice for garnish

Instructions

  1. Make the Meatballs:
    • Mix ground turkey, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper in a bowl.
    • Roll into small meatballs (~1 inch) and set aside.
  2. Prepare the Soup:
    • Heat olive oil in a large pot over medium heat.
    • Sauté garlic, onion, carrots, and celery until softened.
    • Add chicken broth and bring to a boil.
    • Carefully drop in the meatballs and reduce the heat to a simmer.
    • Cook until meatballs are tender and cooked through (about 10 minutes).
  3. Add Pasta and Greens:
    • Stir in acini di pepe and cook according to pasta package instructions.
    • Add spinach or other greens and cook until wilted.
  4. Serve:
    • Garnish with fresh parsley, Parmesan, or a squeeze of lemon for added brightness.
