Ingredients
For the Meatballs:
- Ground turkey (or pork, beef, or chicken)
- Breadcrumbs
- Grated Parmesan cheese
- Egg
- Garlic (minced)
- Italian seasoning
- Salt and pepper
For the Soup:
- Olive oil
- Garlic (minced)
- Onion (diced)
- Carrots (sliced or diced)
- Celery (sliced or diced)
- Chicken broth
- Acini di pepe (or other small pasta)
- Fresh spinach (or kale/escorole)
- Optional: Fresh parsley and lemon juice for garnish
Instructions
- Make the Meatballs:
- Mix ground turkey, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper in a bowl.
- Roll into small meatballs (~1 inch) and set aside.
- Prepare the Soup:
- Heat olive oil in a large pot over medium heat.
- Sauté garlic, onion, carrots, and celery until softened.
- Add chicken broth and bring to a boil.
- Carefully drop in the meatballs and reduce the heat to a simmer.
- Cook until meatballs are tender and cooked through (about 10 minutes).
- Add Pasta and Greens:
- Stir in acini di pepe and cook according to pasta package instructions.
- Add spinach or other greens and cook until wilted.
- Serve:
- Garnish with fresh parsley, Parmesan, or a squeeze of lemon for added brightness.
