Gigi’s Veggie-Packed Garlic Turmeric Rice
Ingredients

- ½ giant yellow onion, finely diced
- 1 purple or orange bell pepper, finely diced
- 6 cloves garlic, finely minced
- 2 tablespoons of recent grated turmeric (if you don’t need yellow fingers put on gloves)
- 1 cup raw jasmine or basmati white rice
- ½ teaspoon kosher salt, plus extra to style
- Freshly floor black pepper
- 2 cups of water or broth
- 1 cup of frozen peas and carrot combine (or frozen blended greens)
- ½ cup finely chopped recent spinach
- To garnish:
- Fresh chopped cilantro, for sprinkling
Instructions

Place a medium pot or deep pan over medium warmth and add in olive oil. Once oil is heat add in onions and peppers and saute for 3 to five minutes, stirring sometimes, till onions are smooth and golden. Next stir in garlic and recent grated turmeric and saute for an extra minute till aromatic, stirring frequently.

Stir 1 cup of the raw rice, kosher salt and freshly floor pepper to the veggie combination. Saute, stirring frequently for 1 minute till rice is evenly coated. Next stir in 2 cups of water.

Bring rice to a mild boil over medium-high warmth for 1 minute, then instantly cowl, cut back warmth to low, and cook dinner for 15 to 18 minutes till rice is tender and all of the liquid has been absorbed.
