Fluffy Gingerbread Pancakes Recipe

  • ¼ cup molasses
  • 2 tablespoons maple syrup
  • 2 tablespoons unsalted butter, melted (or coconut oil for a dairy-free option)
  • 1 teaspoon vanilla extract

Instructions:

  1. Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, ginger, cinnamon, cloves, nutmeg, and salt.
  2. Combine the wet ingredients: In another bowl, beat the egg and add the milk, molasses, maple syrup, melted butter, and vanilla extract. Whisk until smooth.
  3. Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients. Stir until just combined. Be careful not to overmix; it’s okay if the batter is a little lumpy.
  4. Cook the pancakes: Heat a griddle or skillet over medium heat and lightly grease it with butter or oil. Pour about ¼ cup of batter onto the griddle for each pancake. Cook for 2-3 minutes, until bubbles form on the surface of the pancake, then flip it and cook for another 1-2 minutes on the other side until golden brown.
  5. Serve and enjoy: Stack the pancakes on a plate and serve with your favorite toppings like whipped cream, maple syrup, or even extra molasses for that extra gingerbread flavor.
